cornflake cookie baking session

~yen and i - totally her idea to do this :) ~

these are my fav cookies for cny so not one to turn down a baking session, went to ko's house with yen to try out a recipe from cyberkuali. it turned out to be quite good although i think we overbaked d cookies a wee bit. good job for 1st timers....


recipe:


Ingredients

110g butter
110g castor sugar
1/2 tsp grated rind of lemon or orange
1/2 tsp vanilla essence
1 egg yolk
100g cornflakes, crushed lightly
125 g self raising flour
1 tbsp corn flour

Method

1.Cream butter, sugar and essence until the mixture turns light and fluffy.
2. Beat in egg yolk and lemon rind. Fold in sifted flour and mix. Put mixture into the refrigerator to chill for half an hour until it turns slightly firm.
3. Drop teaspoonfuls of mixture onto the crushed cornflakes.
4.Shape into balls and place on lightly-greased baking trays and bake in preheated oven at 170°C for 20—25 minutes or until lightly golden in colour.
5. Cool on wire racks before storing in airtight containers.
